I’m always trying to find something for lunch. I prefer to keep my lunch points to a minimum and zero is as low as it gets. We have a place called Diablos here in town that I love going to at lunch and I pick all of the zero point items they have to make a zero point burrito bowl. Over the weekend, I decided to make it myself and package it up for work lunches. I had also made some Grilled Lemon Chicken that I added on the side to keep it at the zero point level.

Zero Point Burrito Bowl
My husband likes to take leftovers to work for lunch so I found these great three compartment containers on Amazon. They go right into the microwave and dishwasher and are perfect for making lunch in. They happen to fit in my husband’s lunch bag as well so it’s great. They were perfect for this recipe since I was planning on taking these to work.
The Zero Point Burrito Bowl is so easy to make and with only a few ingredients. I made mine in the Instant Pot but it can easily be made in a pot on the stove, just let it simmer for about 30 minutes to blend the flavors together. Once they are done, you can add all sorts of things. My husband, who isn’t following the Weight Watchers plan, added cheese and sour cream on top of his. There are all different things to pair this with chicken breasts like Grilled Lemon Chicken cilantro, lime juice, 0 point yogurt, sour cream, cheese, guacamole, salsa, or fresh tomatoes.
Some other recipes you might enjoy:
- 1 onion, diced
- 4 cloves garlic, minced
- 2 or 3 tomatoes, diced (can use drained, canned tomatoes - about 2 cups)
- 1 15 oz can black beans, drained and rinsed
- 2 cups frozen corn (can use 15 oz can of drained corn)
- 1 cup fat-free chicken broth
- 1 Tbls ground chili powder
- 2 tsp garlic powder
- 1 Tbsp cumin
- 2 tsp salt
- 1 tsp pepper
- Press saute on the instant pot
- Spray with cooking spray and allow to heat a few minutes
- Add onions and garlic, cook about 2 or 3 minutes.
- Add tomatoes, corn, beans, broth, and all seasonings, stir to mix flavors together.
- Put on the lid, making sure it's sealed and set the instant pot to manual 4 minutes.
- Quick release.
- Stir, and if there is more liquid than you would like, set the instant pot to simmer for about 5 minutes.
- Set your pot over medium heat.
- Spray with cooking spray and allow to heat a few minutes
- Add onions and garlic, cook about 2 or 3 minutes.
- Add tomatoes, corn, beans, broth, and all seasonings, stir to mix flavors together.
- Turn the heat up to high and bring to a boil.
- Put a lid on the pot, turn it down to low and simmer for 30-40 minutes.
- Stir, and if there is more liquid than you would like, keep the lid off and left it to boil down a little bit.
- If you are going to use this for lunch, divide into 4 containers and add any extras that you might like, microwaves all vary but perhaps around a minute when you are ready to eat it.
