
Vegetable Stuffed Bell Peppers are full of fresh veggies and perfect for lunch or dinner.
MmmmMmmm so good and fresh with all fresh veggies cooked inside of this pepper. Only 7 carbs and 2 SmartPoints! You can use any color of bell pepper that you like. I like the orange pepper because it’s sweet when cooked and really balances well with the stuffing. This recipe makes four stuffed peppers but can easily be doubled to make eight to eat with guests or to save for later. It’s so easy and the only thing that’s time consuming is chopping up the veg. which really doesn’t take all that much time. Ingredients:
- 4 large bell peppers (I used orange for their mild flavor but you can use your favorite)
- 3/4 lb turkey, ground, 99%
- 1/2 yellow onion, chopped
- 1 clove garlic, minced
- 1/4 cup diced carrots
- 1 c. fresh tomatoes, diced
- 1/2 fresh zucchini , diced
- 2 eggs
- dash crushed red pepper flakes
- 1/2 teaspoon sea salt
- 1/2 teaspoon cumin
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Directions:
Preheat oven to 375 degrees F.
Cut tops off peppers, and scoop out the seeds, place into baking dish.
Brown meat in large skillet. Add chopped onion. minced garlic and carrots and cook for 10 minutes.
Add chopped zucchini and cook 5 minutes.
Remove meat mixture from heat. Add tomatoes, egg and spices; mix well.
Spoon meat mixture evenly into peppers. Bake for 45 minutes until peppers are slightly browned.
