Spinach and Feta Saute is my favorite way to serve spinach. I originally got this from Weight Watcher’s a long time ago and through the years have made some modifications that I think make it taste a little better. I hope that you enjoy it as much as my family and I do. Last night I served this alongside Grilled Garlic Tri-Tip and it’s a perfect match. If you don’t have any fresh spinach, frozen can be used but make sure that it’s thawed completely and that you’ve gotten all of the excess liquid out of it.
Serves 4, Weight Watcher’s SmartPoints: 2 pts.
Spinach and Feta Saute
Ingredients:
- 2 teaspoons olive oil
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 20 ounces fresh baby spinach
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/3 cup crumbled feta cheese
Directions:
In a large skillet, heat oil over medium heat. Add onion and garlic and cook, stirring frequently, for about 4 minutes.
Add spinach (you may need to add this in two stages as 20 ounces is a huge pile of spinach – let first batch cook down then add more on top of it). Season with salt, pepper and garlic powder.
Cook spinach until all of it is wilted, stirring frequently. Stir in feta. Serve.
