Only 2 WW PP & WW SP and just 5 Net Carbs and it doesn’t get any easier than this comfort food. You basically just toss everything into the slow cooker and let it cook for the next 8 hours. I served ours over Roasted Spaghetti Squash but you could serve it over whole wheat pasta or even rice. There are only three of us, so we had left overs to eat the next day. My husband suggested adding kalamata olives which I thought was a brilliant idea …. yum, they really added another dimension!

Ingredients:
- cooking spray
- 1 1/2 – 2 pounds boneless, skinless chicken breasts, cut into 3 inch pieces
- salt
- pepper
- garlic powder
- 1 medium red onion
- 2 bell peppers (any color), thinly sliced
- 5 tomatoes, diced
- 1 tablespoon salt
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh oregano, chopped
- 3 sprigs of thyme
- 1/4 teaspoon crushed red pepper
Directions:
Coat your 5 – 7 quart slow cooker with cooking spray.
To make life easier, dice up your tomatoes in the food processor.
Season chicken with salt, pepper and garlic powder. Place chicken into the slow cooker.
Top with remaining ingredients. Cover and cook on low for 8 hours. Shred chicken and serve.
Serve over roasted spaghetti squash, pasta or rice.
