My husband’s favorite salad is a Broccoli Salad. When this is regularly made, it contains more cranberries and more bacon. It also generally includes shredded cheese and uses regular mayo. I decided to skinny this up by substituting some of the cranberries for green grapes, reducing the amount of bacon and by using light mayo in place of regular and also substituting some of the mayo for Greek yogurt.
It turned out fantastic … and even got my husband’s Seal of Approval.
Skinny Broccoli Salad

Ingredients:
- 2 heads of broccoli, cut into small florets
- 1 1/2 cups seedless green grapes, cut in half
- 3/4 cup dried cranberries (Craisins)
- 1/4 cup dry roasted with salt cashews, chopped
- 1/2 small red onion
- 3 pieces center cut bacon, fried and crumbled
- 1/3 cup light mayonnaise
- 1/4 cup plain fat-free Greek yogurt
- 3 tablespoons sugar
- 1 tablespoon white vinegar
Directions:
In a large bowl, combine broccoli florets, grapes, cranberries, cashews, red onion and crumbled bacon.
In a small bowl, whisk together mayonnaise, yogurt, sugar and vinegar.
Pour dressing over broccoli, toss well. Chill for 1 hour before serving.
