I first had this salad at my daughter-in-law’s mother’s house. This is a recipe that her grandmother use to make although I named it after her. I’ve made a couple of modifications to the dressing and I hope that she won’t mind. This salad is light and fresh tasting. The lemon really makes this pop and it’s so good that you’ll go back for more. A great side salad which would be for 4 people or eat it alone and this would probably be 2 servings if you had it for lunch or dinner as your meal. I made and served this last night with Lotsa Garlic Chicken and it was a great addition to that delicious meal.

Ingredients:
- 1/2 head of iceberg lettuce, torn into bite sized pieces
- 1 avocado, diced
- 1 tomato, diced
- 1 lemon, juiced
- 2 tablespoon vegetable oil
- 1 small cloves garlic, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
Directions:
Combine lettuce, avocado and tomato in a salad bowl.
Combine lemon juice, vegetable oil, garlic, salt, pepper and garlic powder in a salad dressing bottle. Shake to combine.
Dress salad 10 minutes prior to serving to allow flavors to meld.
Serve.
