Luscious Scrambled Eggs with Scallions and Tomatoes

Ingredients:
- Cooking Spray
- 4 large eggs
- 4 egg whites
- 1/3 cup green onions, sliced
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon paprika
- 1 tomato, diced
- 2 ounces Neufchatel cheese (like Philadelphia 1/3 less cream cheese)
Directions:
Coat a medium nonstick skillet with cooking spray. Heat over medium heat.
In a bowl, whisk together eggs, egg whites, scallions, salt, pepper, garlic powder and paprika until blended.
Add egg mixture to the skillet, cook gently turning mixture with a spatula until eggs start to set. About 2 minutes.
Stir in tomatoes and cheese, cook over low heat, gently stirring, just until eggs set, about 1 minute more.
