We love Deviled Eggs, they are very low carbs but made the regular way, they can be at least 3 or more points each. I lightened up a classic recipe making Lightened Deviled Eggs so they are now just 1 point for two halves which is a perfect snack, side or even breakfast. Luckily for us, the owner of my company has chickens (about 100) and we get fresh eggs whenever want ask for some. Farm-fresh eggs are so much tastier than store-bought eggs.
Lightened Deviled Eggs
1 Weight Watchers Freestyle Point
Ingredients:
- 6 hard-boiled eggs, peeled (I made mine in the IP: See Instant Pot Hard Boiled Eggs for directions to make the perfect eggs)
- 1/4 cup light mayonnaise
- 1 teaspoon pickle juice
- 1 teaspoon yellow mustard
- Sprinkle teaspoon garlic powder
- Sprinkle teaspoon salt
- Sprinkle freshly ground black pepper
- Sprinkle paprika
Equipment:
Piping Tools (optional)
Directions:
- Slice eggs in half lengthwise. Remove yolks and place in a medium bowl. Set whites aside on a serving dish.
2. Add mayonnaise, pickle juice, and mustard to the yolks.
3. Mash it all up with a fork and mix well.
4. Evenly pipe the yolk mixture into the egg whites. If you don’t have piping tools, you can spoon the mixture into the whites.
5. Sprinkle tops with garlic powder, salt, pepper, and paprika. Chill and enjoy!
