Quick and oh so easy ~ made in one pot so clean up is a breeze too. This was so good, I added rice (which was made in the rice cooker) to soak up the wonderful lemony sauce. My husband doesn’t care for brown rice so we had white rice which isn’t as good for you but there’s only so much healthy eating that I can push on him. Even with the white rice (kept at 1/2 cup) this was still low points and that’s what I was looking for. If you are going for low carbs, skip the rice all together.
Lemon Garlic Pork Chops and Green Beans

Ingredients:
- 1 tablespoon olive oil
- 4 3/4 inch boneless pork chops (about 1 1/2 pounds)
- salt
- pepper
- garlic powder
- 6 garlic cloves, minced
- 2 lemons, juiced
- 1 1/2 cups chicken broth
- 1 pound green beans, trimmed and halved
- 1 tablespoon butter
Directions:
Heat olive oil in a large pan over medium high heat. Season the pork generously with salt, pepper and garlic powder. Add pork to the skillet and cook about 5 minutes per side. (If your chops are thinner, cook less time.) Transfer to plate and set aside for now.
Add garlic to the pan and cook for only about 30 seconds. Add lemon juice, chicken broth and green beans to the pan and boil for about 5 minutes (until green beans reach your desired crispness). Stir in butter.
Add pork chops back into the pan, remove from heat and let sit for a couple of minutes to absorb the flavors.
Serve and spoon pan sauce over pork chops.
