Asparagus is one of our favorite vegetables and this is my favorite way to serve it. It’s quick, easy, tasty and healty. Too bad that it takes so long to grow or I would plant some in my garden. My best friend, Fran, has some planted and just this year was able to harvest some … she didn’t share! 🙂
With only 4 g Carbs and 1 SmartPoint, it easily fits into any meal. I made this last night to go along with the Stuffed Tenderloin that my husband was making … needless to say that my job was a lot easier than his! Just how I like it.
Lemon and Garlic Asparagus

Ingredients:
- 1 bunch asparagus, ends trimmed
- 1 teaspoon olive oil
- 1/2 lemon, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 3 clove garlic, chopped
- 1/2 lemon, sliced
Directions:
Preheat oven to 400 degrees F.
Place trimmed asparagus on a baking sheet. I like to use a silicone mat for easier clean up and no sticking.
Sprinkle with olive oil and lemon juice. Mix up with hands. Then sprinkle with salt, pepper, garlic powder and chopped garlic. Mix up with hands to coat. Spread asparagus out on the pan and top with lemon slices. Roast in oven for 15 – 20 minutes until done to your taste.
