Instant Pot Herbed Mashed Potatoes are so easy to make! I made these to go with my Instant Pot Chicken Coq Au Vin the other night and they were perfect. Luckily, I have two Instant Pot liners so I made the Potatoes and then set them aside covered in foil to stay warm while I made the Coq Au Vin. This is where having two Instant Pots would really come in handy but my other Instant Pot is in Hawaii with my husband.

Serves 6, Serving size: 2/3 cup, Calories 122, Fat 3 g, Saturated Fat 2 g, Carbs 21 g, Fiber 3 g, Net Carbs 19 g, Sugars 2 g, Protein 3 g, Weight Watcher’s Points Plus: 3 points, Weight Watcher’s SmartPoints: 4 points.
Ingredients:
- 1 1/2 pounds Yukon gold potatoes, small, quartered
- 1 cup chicken broth
- 1 tablespoon butter, cut up
- 1 teaspoon fresh thyme, stemmed
- 2 teaspoons fresh parsley, chopped
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup half-and-half (more or less to consistency you prefer)
Directions:
Put the potatoes and broth into the Instant Pot.
Lock the Instant Pot lid and set the pot on Manual / High Pressure for 15 minutes. When done, quick release (QR).
Add butter, thyme, parsley, salt and pepper to the Instant Pot.
Using a potato masher, mash all of the ingredients together.
Add in half-and-half using more or less depending on the consistency that you like your mashed potatoes. Mix well.
Serve with your favorite meal. Enjoy!
