We ate out tonight … Yay! When we got home I decided to whip up something for dessert. I had some apples and the other ingredients in the pantry so this was a great choice. I love individual dishes so you don’t need to worry about portion control. These turned out great and I will be making them again the next time that we have company over so I can share them with others. I used Gala apples, but I’m sure that you could use any hard apple, I was thinking that Granny Smith would be nice and tart. I also used Walnut Oil. If you don’t have that handy, sub in melted butter or coconut oil.
Individual Apple, Cranberry and Walnut Crisps

Ingredients:
- 2 fresh apples (medium – large)
- 1/4 cup dried cranberries
- 2 teaspoons fresh lemon juice
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
- 1/2 cup old fashioned oats
- 1 1/2 tablespoons walnuts, finely chopped
- 1 tablespoon brown sugar
- 1 tablespoon walnut oil (can substitute melted butter)
Directions:
Preheat oven to 350 degrees F.
In a large bowl, combine apples, cranberries, lemon juice, sugar and 1/2 teaspoon of the cinnamon.
Divide into individual ramekins and set aside.
In same bowl that you used for the apples, combine oats, walnuts, brown sugar, walnut oil, and remainder of cinnamon. Mix with fingers until mixture is combined and crumbly.
Sprinkle crumb mixture over apples. Place ramekins on a baking sheet.
Bake for about 45-50 minutes. Let cool for 10 minutes and serve. (Wonderful topped with some whipped cream or even some ice cream if you have the points!)
