This is a wonderful goulash. The normal pasta has been replaced with cauliflower to lower the carbohydrates and the Weight Watcher’s SmartPoints down to 2. The points were so low that I served this with some garlic bread to sop up all the nice tomato sauce. It was a delicious and comforting meal. Made in one pot so it’s easy!
Garlic Cauliflower Goulash

Serves: 6, Weight Watcher’s SmartPoints 2 pts.
Ingredients:
- 1 pound 99% ground turkey
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 1/2 cups water
- 1 15 ounce can tomato sauce
- 4 plum tomatoes, diced
- 1 tablespoon Italian seasoning
- 1 bay leaf
- 1 tablespoon soy sauce
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 head of cauliflower, florets chopped small (about 4 cups)
- Optional: Sprinkle of freshly grated Parmesan cheese
Directions:
In a large pot, cook ground turkey over medium heat until browned. Add onion and garlic, saute for about 5 minutes.
Add ever ingredient except the cauliflower. Bring to a boil then simmer for 30 minutes.
Add in cauliflower and simmer an additional 35-45 minutes or until cauliflower is tender. Remove bay leaf before serving.
Optional: Sprinkle with Parmesan cheese.
