Recipe type: Main

Serves: 4
  • 1 lb skinless, boneless chicken breast halves (about 3 or 4)
  • Juice from 2 large lemons (about ⅓ cup or so)
  • ½ tsp. Garlic Powder
  • Salt
  • Pepper
  1. Place chicken into a ziplock bag and add the lemon juice. Rub it around to coat all of the chicken.
  2. Refrigerate 10 - 20 minutes to marinate. (No longer or the acid in the lemon juice will start to cook the chicken.)
  3. While the chicken is marinating, prepare the grill by spraying it with cooking spray. Heat the grill with lid closed on medium heat to approximately 400 degrees.
  4. Once the chicken has finished marinating, discard the bag with any remaining juices. Sprinkle the chicken breasts with garlic powder, salt and pepper.
  5. Grill the chicken breasts over direct medium heat, with the lid closed, until the meat is firm to the touch and no longer pink in the center, 8 to 12 minutes, turning once or twice. Remove from the grill and let rest for 3 to 5 minutes.
