  • 2 pound(s) uncooked boneless skinless chicken breast(s), cut into fillets
  • Garlic powder sprinkled on chicken
  • Oregano sprinkled on chicken
  • Salt sprinkled on chicken
  • Pepper sprinkled on chicken
  • 1-second spray Cooking Spray, Vegetable Oil
  • 1Tbsp regular butter
  • 1 small onion, diced
  • 5 medium garlic clove(s), minced
  • 1 pound fresh cherry tomatoes, quartered
  • ⅓ cup fresh basil, chopped
  1. Sprinkle the chicken on both sides with garlic powder, oregano, salt, and pepper.
  2. Spray a medium-sized skillet with the non-fat cooking spray.
  3. On medium high heat, cook the chicken in the pan for about 4 minutes on each side, or until chicken is almost cooked.
  4. Remove the chicken from the pan and set aside.
  5. Turn the heat down to medium and add in the butter.
  6. Once the butter is melted, add in the onions and garlic. Saute for a few minutes, until onions are translucent.
  7. Stir in the tomatoes and cook for an additional 4 minutes.
  8. Nuzzle the chicken down into the tomatoes and cook on a low simmer for about 5 more minutes.
You can add in extra veggies like spinach or zucchini at the same time that the tomatoes are added. For extra points, sprinkle on some parmesan or mozzarella.
