Lemon Garlic Pork Chops and Green Beans

Serves: 4
  • 1 tablespoon olive oil
  • 4¾ inch boneless pork chops (about 1½ pounds)
  • salt
  • pepper
  • garlic powder
  • 6 garlic cloves, minced
  • 2 lemons, juiced
  • 1½ cups chicken broth
  • 1 pound green beans, trimmed and halved
  • 1 tablespoon butter
  1. Heat olive oil in a large pan over medium high heat.  Season the pork generously with salt, pepper and garlic powder.  Add pork to the skillet and cook about 5 minutes per side.  (If your chops are thinner, cook less time.)  Transfer to plate and set aside for now.
  2. Add garlic to the pan and cook for only about 30 seconds.  Add lemon juice, chicken broth and green beans to the pan and boil for about 5 minutes (until green beans reach your desired crispness).  Stir in butter.
  3. Add pork chops back into the pan, remove from heat and let sit for a couple of minutes to absorb the flavors.
  4. Serve and spoon pan sauce over pork chops.
