My Mother-In-Law comes to visit with us and cooks some wonderful meals while she is with us. One of our favorite things that she makes is this salad dressing which is served simply on romaine lettuce. The fresh ingredients make this so bright and tasty, especially the lemon juice. This is only 1 Carb so it’s easy to eat this and would be wonderful with some pieces of grilled steak or chicken added to the salad.
I made this for dinner last night and my husband cleaned out the salad bowl. Everyone loves it and I know that you will too. Super easy and quick to make too!

Ingredients:
- 1 large garlic clove
- 1 lemon, juiced
- 1/4 cup olive oil
- 1 egg
- 1/2 cup freshly grated Parmesan Cheese
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
Directions:
Mince the garlic first then smash it up in a Mortar and Pestal.
Whisk all ingredients together or shake up in a salad dressing bottle.
Poor into salad bowl, add lettuce (Romaine is great with this dressing) and toss. Serve with shaved Parmesan on top.
