Chicken with Garlic, Zucchini and Mushrooms

Ingredients:
- 1 pound chicken breast, cut into 1 inch pieces
- salt, pepper and garlic powder
- 2 teaspoons olive oil
- 4 large garlic cloves, roughly cut
- 1 tablespoon butter
- 1/2 pound mushrooms, sliced
- 1 pound zucchini, cut into 1/4 inch rounds
- 1 pound yellow squash, cut into 1/4 inch rounds
- 1/2 lemon, juiced
- 1/4 cup water
- 3/4 cup grape tomatoes, halved
- salt and pepper
- 1/4 cup fresh basil, chopped
- 1/4 cup freshly grated Parmesan cheese
Directions:
Generously add salt, pepper and garlic powder to chicken.
Add olive oil to a deep skillet and heat on medium heat. Add garlic and cook for 1 minute.
Add chicken to the garlic and cook for 10 minutes, stirring occasionally. Transfer to plate and set aside for now.
Melt butter in same skillet. Add garlic and mushrooms and saute for 5 minutes.
Add zucchini and yellow squash and cook, stirring occasionally for 3 minutes.
Add lemon juice, water and tomatoes and continue cooking on medium heat for 3 minutes.
Top with fresh basil and Parmesan. Serve.
