My husband’s favorite thing is pineapple and I love salmon so why not put the two together! Luckily for us, we’re in Hawaii where pineapples and the Dole Plantation are all around us. When my husband took his first bite of this he said “Amazingly Good.” Music to my ears as nothing makes me happier then hearing those words and knowing that I’ve made a delicious and nutritious meal for my family. (Well, maybe a diamond tennis bracelet would make me happier .. but for now I’ll need to settle on food compliments).
Broiled Pineapple Salmon

Serves: 4, Calories 256, Fat 9 g, Sat Fat 3 g, Carbs 19 g, Fiber 1 g, Net Carbs 18 g, Sugars 17 g, Protein 24 g, Weight Watcher’s Points Plus: 6 pts, Weight Watcher’s SmartPoints: 6 pts.
Ingredients:
- 1 pounds of salmon with skin on, cut into 4 fillets
Marinade:
- 1/2 cup fresh pineapple
- 2 tablespoons real maple syrup
- 2 tablespoons soy sauce
- 1/2 inch fresh ginger, peeled
- 2-3 garlic cloves (2 large or 3 small)
- 2 tablespoons fresh cilantro
Salsa:
- 2 cups pineapple, chopped into small pieces
- 1/2 cup red bell pepper, chopped into small pieces
- 2 jalapeno peppers, seeds removed and finely chopped
- 2 teaspoons salt
- 2 tablespoons sugar
- 3 tablespoons water
- 2 tablespoons cilantro
Directions:
Place salmon fillets into a ziploc type bag and set aside.
In a food processor, combine all marinade ingredients and blend together. Once blended, add cilantro.
Add marinade to bag with salmon and refrigerate from 1 – 24 hours. (The longer you can marinade, the more flavor the salmon will absorb.)
While salmon is marinading, Mix together all salsa ingredients in a sauce pan over medium heat. Bring to a low boil and then simmer for 5 minutes.
Cool. Once cooled, sprinkle cilantro on top then refrigerate until ready to use.
Preheat broiler. Set top rack into the top slot.
Generously spray a broiler pan with cooking spray.
Place salmon on a broiler pan, skin side down.
Broil 7 minutes or until desired degree of doneness.
Serve with salsa spoon on the top along with a drizzle of the juices.
