I might be in Hawaii right now but I grew up in Maine. In Maine you eat Boston Baked Beans and they are a wonderful childhood memory for me. Traditionally, they are pretty high on the Carb and Weight Watcher’s spectrum so I worked on lightening them up. They came out rich and delicious. My husband, my son, his buddy and I loved them and ate them for dinner tonight along with some steak and green beans.
The recipe takes about 6 hours to make (once the beans are soaked) but it’s well worth the time. It’s really easy too which is a big plus and the majority of time to make is spent in the oven and it’s hands off.

Ingredients
- 16 oz bag dry navy beans (a little more than 2 cups)
- 4 oz center cut bacon (approx. 6 slices), diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons molasses
- 2 1/2 teaspoons salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dry mustard
- 1/2 cup reduced sugar ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup brown sugar
Directions:
Soak beans overnight in cold water. Simmer beans in that water for 1 1/2 hours. Drain and reserve the liquid to use later. Place beans into a small Dutch oven
or a bean pot.
Preheat oven to 325 degrees F.
In a small bowl, mix the rest of the ingredients.
Add to the beans and mix. Add reserved water to cover the beans. (If necessary, add additional water to cover beans.)
Bake for 2 hours. Remove beans from oven and stir. If water has evaporated, add another cup of water and stir.
Bake for another 2 hours, stir and serve.
