Last night I didn’t know what to do for dinner and really wasn’t in the mood to cook (ha!) So we had leftover grilled tri tip in the refrigerator. I thought that it might be nice with some gravy but I didn’t have any drippings to work with so I made this gravy that doesn’t need any drippings. It gets it’s flavor from the onions, garlic and broth and a richness from the butter and heavy cream. This would be great with any grilled meat since you don’t have the drippings to work with. If you want a smooth gravy, you could use an emulsion blender to blend up the onions or strain out the onions.
Beef Gravy without Pan Drippings

Ingredients
- 3 tablespoons butter
- 1/2 large onion, finely chopped
- 1 garlic clove, minced
- 2 tablespoons whole wheat flour
- 1 cup beef broth
- 1 tablespoon heavy cream
- salt, pepper, garlic powder
Directions
Melt butter in a sauce pan. Add onion and garlic and cook on medium heat until lightly browned, about 8 – 10 minutes.
Whisk in the flour and cook for 2 minutes. Whisk in the broth and cook uncovered until thickened, roughly 5-6 minutes. Add in the cream and season with salt, pepper and garlic powder to taste.
