Tomorrow I’m going to be making Huevos Rancheros and I need a salsa to go with that. Instead of making Fresh Tomato Salsa, I wanted to switch it up some and create a salsa that is kind of a hybrid between a guacamole and a salsa so I added avocado to my recipe. It turned out wonderful. So bright, fresh and flavorful. My husband and I had some with chips tonight and I will say that diced onions would work best (vs sliced) if you are planning on using this as a dip for chips or veggies. As a side or condiment, the sliced are better, or at least make the salsa look so nice.
Avocado and Tomato Salsa

Ingredients:
- 2 Roma tomatoes, diced
- 2 ripe avocados, diced
- 1/4 small red onion, thinly sliced or diced
- 1/2 jalapeno, finely diced (more or less depending on how much you like heat)
- 2 garlic cloves, minced
- 1/3 cup chopped cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 limes, juiced
Directions:
Mix together tomatoes, avocado, onion, jalapeno, garlic and cilantro.
Add cumin, salt, pepper and lime juice. Mix well but gently.
Serve with chips, raw vegetables or as a side or condiment to a main dish.
