Tomato Garlic and Basil Chicken
Tomato Garlic and Basil Chicken is a go-to dinner. We eat a lot of chicken in our house. It’s inexpensive and 0 points! This is quick to make and full of flavor with fresh basil and garlic. We love garlic so I’ve got 5 cloves in here but if you don’t like it as much, you can always tone it down a little. This dish can be served on it’s own with a side of vegetables for a 1 point meal or paired with spaghetti which is how we eat it. I keep my pasta intake at a minimum and eat 1/2 cup for 3 points. And yes, I did eat that roll and must admit that I don’t even know how many points that cost me.

Tomato Garlic and Basil Chicken
You can add in some other ingredients if you want. Some rosemary or thyme are always great additions that have no points. Also, some other veggies like zucchini would work perfectly. If you have the extra points, a sprinkle of parmesan or mozzarella would be divine.
This makes a good 5 or 6 servings. For my family of 3, that means extra for lunch. I pack it up with a side of vegetables, leave out the pasta (and bread) for a nice 1 point afternoon meal.

- 2 pound(s) uncooked boneless skinless chicken breast(s), cut into fillets
- Garlic powder sprinkled on chicken
- Oregano sprinkled on chicken
- Salt sprinkled on chicken
- Pepper sprinkled on chicken
- 1-second spray Cooking Spray, Vegetable Oil
- 1Tbsp regular butter
- 1 small onion, diced
- 5 medium garlic clove(s), minced
- 1 pound fresh cherry tomatoes, quartered
- ⅓ cup fresh basil, chopped
- Sprinkle the chicken on both sides with garlic powder, oregano, salt, and pepper.
- Spray a medium-sized skillet with the non-fat cooking spray.
- On
medium high heat, cook the chicken in the pan for about 4 minutes on each side, or until chicken is almost cooked. - Remove the chicken from the pan and set aside.
- Turn the heat down to medium and add in the butter.
- Once the butter is melted, add in the onions and garlic. Saute for a few minutes, until onions are translucent.
- Stir in the tomatoes and cook for an additional 4 minutes.
- Nuzzle the chicken down into the tomatoes and cook on a low simmer for about 5 more minutes.
