I’m always looking for new recipes that I can convert to something lighter but yet full of flavor. Instant Pot Creamy Cilantro Lime Chicken is just that recipe. I originally found it at The Recipe Critic and it looked amazing. Theirs was made in the slow cooker and had some things that would have made it high in Weight Watchers points. With a few modifications and a conversion to the Instant Pot, it’s perfect for me and my family. This recipe is just 4 points per serving (not counting the rice). The Cilantro Lime Rice is also made in the Instant Pot.
Instant Pot Creamy Cilantro Lime Chicken
Serves 6
4 Weight Watchers Points
Ingredients:
- 1 1⁄2 pound(s) uncooked boneless skinless chicken thigh(s)
- 2 tsp chili powder
- 1 tsp ground cumin
- 1⁄2 tsp paprika
- 1⁄4 tsp black pepper
- 1⁄2 Tbsp olive oil
- 2 cup(s) fat-free chicken broth
- 1⁄2 cup(s) half-and-half cream
- 2 Tbsp cilantro, chopped
- 1 Tbsp Corn Starch
- 1 Tbsp water
- 1⁄4 cup fresh lime juice
- zest of one lime
Equipment:
Instant Pot
Tongs (long enough to reach the bottom of the pot)
Juicer
Directions:
1. Set the Instant Pot on Saute, add olive oil let it heat up a few minutes.
2. While the IP heats up, combine chili powder, cumin, paprika, and pepper in a bowl. Rub the seasoning all over the chicken. Place the chicken into the hot Instant Pot and sear both sides.
3. Add the chicken broth.
4. Set the Instant Pot on Manual/High 5 minutes. Quick Release once the 5 minutes are over.
5. Remove the chicken and set the Instant Pot on Saute. Mix up the cornstarch and water. Add the cornstarch mixture, half and half, and the cilantro, into the broth in the pot. Mix together with a whisk and let it cook for about 5 minutes until thickened a bit.
6. Add the chicken back into the pot, add in the lime juice and heat for about a minute (you are just heating the chicken back up).
7. Serve the chicken topped with the sauce and sprinkle some of the lime zest on top and optionally add some cilantro. Enjoy!
