I was thrilled when my lovely co-worker, Gia, shared her homemade soup recipe with me. Converting it to an instant pot dish was a cinch and Gia’s Instant Pot Chicken Taco Soup was created! Gia makes the most wonderful foods … Italian cookies! Even on a diet, I just can’t get enough of them. Luckily, she only makes them once a year so it’s okay to splurge a little when I can get my hands on them. Enough about cookies! This soup is amazingly easy and good. You won’t believe it’s just 1 Weight Watchers point!
Instant Pot Chicken Taco Soup
Serves 5 – 10
1 Weight Watchers Points
Ingredients:
1 pound uncooked boneless skinless chicken breast(s)
3 cup(s) cooked navy beans, with liquid (I made my own navy beans from dried or you can use canned navy beans)
1 bottle Blue Moon Belgian white
1 pound fresh tomatoes, diced (I used Roma Tomatoes for their firmness)
1 1⁄2 cup(s) frozen corn kernels
1 medium onion, chopped
1⁄2 cup chopped green chilies
1⁄2 cup taco seasoning (make your own)
bunch of cilantro, chopped
fresh limes, cut into wedges for squeezing into bowls
Equipment:
Directions:
- 1. Put everything but the chicken and limes into the Instant Pot. Stir it up, then stick the chicken down into everything so it’s covered up.
2. Set the Instant Pot on Manual for 15 minutes.
3. Quick release. Remove chicken and shred with two forks.
4. Put chicken back into the pot. Stir it up and serve with a squeeze of lime and a few pieces of cilantro on top. Enjoy your 1 point soup! Thanks, Gia!
