Tonight, my husband made Prime Rib. I don’t even know how many Weight Watcher points were in that but for those counting carbs, it’s all good news! Because of the numerous points in the Prime Rib, I decided that I needed a very healthy and low point side. I wanted to use my Instant Pot but only had a big point recipe for the crock pot that I found at crock-pot.com. The modifications to my Instant Pot Bacon and Brussels Sprouts make it just 1 Freestyle point and because it’s in the Instant Pot, don’t take long to cook at all! A lot of people don’t care much for Brussels but believe me, these just might change your mind. My husband and my 11 years old ate and loved them. I think it’s the bacon that changes everything!
Instant Pot Bacon and Brussels Sprouts
4 Servings
1 Weight Watchers Freestyle Point
Ingredients:
- 2 slices Wright Bacon, Applewood, diced
- 1 pound(s) uncooked Brussels sprouts
- 1 shallot(s), diced
- 2 medium clove(s) garlic, chopped
- 1⁄2 cup(s) fat-free chicken broth
- 1⁄8 tsp black pepper
- 1⁄8 tsp table salt

Directions:
1. Set the Instant Pot to Saute at normal temperature. Once hot, add the bacon. Cook, stirring as needed, until browning/crisping up. (About 7-8 minutes).
2. Add in the brussels sprouts, shallots, and garlic. Continue to cook for another 5 minutes, stirring as needed.
3. Pour in chicken broth, salt, and pepper.
4. Close and lock the lid. Select high pressure; set timer for 3 minutes.
5. Instant release when done, stir and serve. Enjoy!
