Garlic Cauliflower Goulash

Ingredients
  • 1 pound 99% ground turkey
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1½ cups water
  • 1 15 ounce can tomato sauce
  • 4 plum tomatoes, diced
  • 1 tablespoon Italian seasoning
  • 1 bay leaf
  • 1 tablespoon soy sauce
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 head of cauliflower, florets chopped small (about 4 cups)
  • Optional: Sprinkle of freshly grated Parmesan Cheese
Directions
  1. In a large pot, cook ground turkey over medium heat until browned. Add onion and garlic, saute for about 5 minutes.
  2. Add ever ingredient except the cauliflower. Bring to a boil then simmer for 30 minutes.
  3. Add in cauliflower and simmer an additional 35-45 minutes or until cauliflower is tender. Remove bay leaf before serving.
  4. Optional: Sprinkle with Parmesan cheese.
