Lotsa Garlic Chicken

Ingredients
  • 3 chicken thighs
  • 3 chicken legs
  • 1½ teaspoons salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ⅛ cup plus 2 tablespoons olive oil
  • ¾ cup white wine
  • 5 sprigs fresh rosemary
  • 5 sprigs fresh thyme
  • 2-3 bulbs of garlic, cloves peeled (about 45 bulbs)
Directions
  1. Preheat oven to 350 degrees F.
  2. Stick chicken into a gallon size ziplock bag and add 2 tablespoons olive oil, salt, pepper and garlic powder. Shake up to cover all chicken.
  3. Heat cast iron skillet on high heat and brown both side of chicken.
  4. Remove pan from heat and add remaining ingredients. Cover tightly and bake for 1½ hours.
  5. Remove chicken from oven and let rest for 10 minutes. Serve with drippings drizzled on top.
