Baked Apples à La Mode
Serves: 4
  • cooking spray
  • 2 large Honeycrisp apples, peeled, cored & halved vertically
  • 3 tablespoons brown sugar
  • 2  tablespoons butter, melted
  • ¾ teaspoons ground cinnamon
  • 2 tablespoons walnuts, chopped into small pieces
  • 2 tablespoons old-fashioned oats
  • 1 teaspoon flour
  • ¼ teaspoon salt
  • ½ cup caramel ice cream (such as Haagen Daz Dulce de Leche)
  1. Preheat oven to 400 F.  Spray an
  2. x8 glass or ceramic baking pan
  3. with cooking spray.
  4. Starting at the outer-most edges, cut most of the way through each apple half at ⅛ inch intervals.  (using
  5. chopsticks
  6. as pictured above helps to stop the knife from going all the way through the apple).
  7. Place apple halves, cut side down, in the baking dish.
  8. Combine 1 tablespoon of the brown sugar, 1 tablespoon of the butter, and ½ teaspoon of the cinnamon.  Brush mixture onto the backs of the apples.
  9. Cover pan with tin foil and bake for 20 minutes.  Remove foil and continue baking for another 10 minutes.  Remove pan from oven and let cool for 10 minutes or so (until apples are cool enough to handle).
  10. Combine remaining 2 tablespoons brown sugar, 1 tablespoon butter, ¼ teaspoon cinnamon, walnuts, oats, flour, and salt.  Fan open the apples and spoon the oat mixture evenly into the cuts.
  11. Put back into the oven for 10 minutes.  Turn the broiler to high while the pan is still in the oven and broil for 3 minutes.
  12. Top with ice cream and prepare to drool!
