Instant Pot Bacon and Brussels Sprouts 4 Servings 1 Weight Watchers Freestyle Point

  • 2 slices Wright Bacon, Applewood, diced
  • 1 pound(s) uncooked Brussels sprouts, cleaned and cut in half
  • 1 shallot(s), diced
  • 2 medium clove(s) garlic , chopped
  • 1⁄2 cup(s) fat-free chicken broth
  • 1⁄8 tsp black pepper
  • 1⁄8 tsp table salt
  1. Set the Instant Pot on Saute at normal temperature. Once hot, add the bacon. Cook, stirring as needed, until browning/crisping up. (About 7 minutes).
  2. Add in the brussels sprouts, shallots, and garlic.  Continue to cook for another 5 minutes, stirring as needed.
  3. Pour in chicken broth, salt, and pepper.
  4. Close and lock the lid. Select high pressure; set timer for 3 minutes.
  5. Instant release when done, stir and serve.  Enjoy!
