Instant Pot Rich and Creamy Rice Pudding

Serves: 6
  • ¾ cups medium grain rice (such as Arborio)
  • ⅓ cup sugar
  • ¼ teaspoon salt
  • 2½ cups almond milk
  • 1 egg
  • 1 tablespoon butter
  • ⅓ cup raisins
  • 1 teaspoon lemon zest
  • ½ teaspoon cinnamon
  1. Add rice, sugar, salt and milk to the Instant Pot.  Stir to mix.
  2. Set pot to Saute / Normal and bring pot to a boil while stirring constantly.
  3. Once mixture comes to a boil, set the Instant Pot on the Rice setting.
  4. While the rice is cooking whisk together the egg and vanilla.
  5. When the rice and milk is done cooking, turn the Instant Pot off by pressing the Cancel button and let it sit, still covered, for 15 minutes then quick release (QR).
  6. Add the egg mixture, butter, raisins, lemon zest and Cinnamon.  Stir together.
  7. Serve warm or chilled (I like it best warm myself).  I like to sprinkle a little more Cinnamon on top.
