Instant Pot Fresh Tomato Basil Sauce

Ingredients
  • 2 tablespoons olive oil
  • 6 garlic cloves, minced
  • 1 onion, diced
  • 4½ - 5 pounds Romas tomatoes, diced
  • 1 tablespoon salt
  • ½ tablespoon pepper
  • ½ tablespoon garlic powder
  • 1½ tablespoons Italian seasoning
  • ¼ teaspoon crushed peppers
  • 1 bay leaf
  • ½ cup chopped fresh basil
Directions
  1. Heat Instant Pot on Saute / More. Add olive oil.
  2. Add garlic and onions. Saute until soft, about 5 minutes.
  3. Add tomatoes, salt, pepper, garlic powder, Italian seasoning, crushed peppers and bay leaf to the Instant Pot. Stir to combine.
  4. Set Instant Pot to Manual / High Pressure for 10 minutes. Quick Release (QR)
  5. Add Basil and stir in. Set pot to Saute / More again and let simmer for 5 minutes.
  6. Remove bay leaf and serve or use in another recipe.
  7. Can be kept in the refrigerator for up to 5 days or frozen for later use.
