Baked Blueberry and Lemon Oatmeal

Ingredients
  • 1½ cups fresh blueberries
  • 1½ tablespoons fresh lemon juice, divided
  • 3 cups old fashioned oats
  • 1 large egg, beaten
  • ¼ cup firmly packed brown sugar
  • 1 cup applesauce
  • ½ tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup water
  • ½ cup almond milk
Directions
  1. Preheat oven to 350 degrees F. Spray an 8 x 8 baking dish with cooking spray.
  2. Toss the blueberries in half of the lemon juice then spread evenly onto the bottom of the baking dish. Set aside.
  3. Combine the remaining lemon juice with the oats and all remaining ingredients in a large bowl. Stir until well blended.
  4. Pour oat mixture evenly over the top of the blueberries.
  5. Cover with aluminum foil and bake for 30 minutes. Uncover and bake an additional 20 minutes or until golden brown and set.
  6. Let it sit for about 5 minutes, serve and enjoy!
Notes
Can use frozen blueberries in place of fresh. No need to defrost.
