Cucumber, Tomato and Red Onion Salad
  • 2 cucumbers, thinly  sliced and drained **
  • ¾ of whole red onion, thinly sliced
  • 3 Roma tomatoes, seeded and diced
  • 3 tablespoons lemon juice
  • 3 tablespoons light sour cream
  • ¾ teaspoon sugar
  • 1 ½ teaspoons fresh dill, chopped (or ½ teas dried dill)
  • salt and pepper to taste.
  1. **To get the water out of the cucumbers, thinly slice. Place paper towels on a plate and put cucumbers on top of paper towels. Put another paper towel on top of that then put another plate on top of the paper towel. Put into the refrigerator for at least one hour. The paper towels will soak up the water.
  2. Put drained cucumbers, red onions and tomatoes into a bowl or container. Mix together.
  3. Mix the rest of the ingredients together in a container that you can close and shake to mix. Or you can whisk the dressing together.
  4. Taste the dressing to make sure that it’s well seasoned.
  5. Pour dressing over
  6. cucumber
  7. mix. Mix this all together.
  8. Chill in refrigerator for at least one hour before serving.
