Serves: 4
  • 2 fresh apples (medium - large)
  • ¼ cup dried cranberries
  • 2 teaspoons fresh lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • ½ cup old fashioned oats
  • 1½ tablespoons walnuts, finely chopped
  • 1 tablespoon brown sugar
  • 1 tablespoon walnut oil (can substitute melted butter)
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine apples, cranberries, lemon juice, sugar and ½ teaspoon of the cinnamon.
  3. Divide into individual ramekins and set aside.
  4. In same bowl that you used for the apples, combine oats, walnuts, brown sugar, walnut oil, and remainder of cinnamon. Mix with fingers until mixture is combined and crumbly.
  5. Sprinkle crumb mixture over apples.
  6. Place ramekins on baking sheet and bake for about 45-50 minutes. Let cool for 10 minutes and serve. (Wonderful topped with some whipped cream or even some ice cream if you have the points!)
I used Gala apples but you could use any crisp apple.
