Baked Spaghetti Casserole

Ingredients
  • 6 ounces whole grain angel hair pasta
  • 2 teaspoons olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 3 links mild Italian turkey sausage, casings removed (about 9.5 ounces)
  • 1 green bell pepper, diced
  • ½ pound button mushrooms, sliced
  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 4 large tomatoes (about 2 pounds)
  • ½ cup pasta water
  • 2 teaspoon kosher salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 cup fresh basil, coarsely chopped
  • 1 cup shredded part-skim mozzarella cheese
  • Optional: Parmesan cheese
Directions
  1. Cook angel hair pasta according to package directions.  Strain and set aside, keep ½ cup of pasta water for use later.
  2. While pasta cooks, heat the olive oil in a large, deep skillet over medium-high heat.  Add the onion and cook, stirring frequently for 5 minutes.  Add the garlic and cook another 2 minutes.
  3. Add the sausage and cook, breaking up the meat, for 5 minutes.
  4. Add the bell pepper, mushrooms, oregano, rosemary and parsley.  Cook for 4 minutes.
  5. Blend tomatoes in a food processor until finely chopped.  Add tomatoes to the skillet along with ½ cup pasta water, salt, pepper, garlic powder and basil.  Bring to a boil.  Reduce heat to medium low and simmer for about 20 minutes.
  6. Preheat oven to 375 degrees F.  Spray a 2½ quart casserole dish with cooking spray.
  7. Add the angel hair pasta to the skillet and toss to combine with the sauce.
  8. Spoon half of the pasta mixture into the casserole dish.  Sprinkle with ½ cup of mozzarella.  Spoon in the remaining pasta on top and sprinkle with the remaining ½ cup of mozzarella.  Cover casserole dish loosely with foil, making sure that the foil does not touch the cheese.  Bake for 25 minutes.
  9. Let stand for 5 minutes.  Serve & Enjoy.  (Optional: Sprinkle with fresh Parmesan cheese before serving.)
