Spinach and Feta Saute

Serves: 4
  • 2 teaspoons olive oil
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 20 ounces fresh baby spinach
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ½ cup crumbled feta cheese
  1. In a large skillet, heat oil over medium heat. Add onion and garlic and cook, stirring frequently, for about 4 minutes.
  2. Add spinach (you may need to add this in two stages as 20 ounces is a huge pile of spinach - let batch cook down then add more on top of it). Season with salt, pepper and garlic powder.
  3. Cook spinach until all of it is wilted, stirring frequently. Stir in feta. Serve.
** You can substitute in 20 ounces of frozen spinach, just make sure the spinach is thawed and squeeze it to remove all excess liquid.
